about chocolate and pastry.
A 2 days practical masterclass with a step-by-step approach presents a curated selection of some of chef Ramon’s most representative pastry creations.
This class is designed for professional pastry chefs seeking to deepen their understanding of advanced pastry techniques and processes, while also being accessible to highly skilled home bakers with a solid foundation in modern pastry.
Special emphasis will be placed on exploring the different technical options available, as well as on understanding the role of each ingredient in the structure of the products at every stage of production.
While the recipes serve as the framework, the true emphasis lies in understanding why each component behaves the way it does. Participants will gain a solid, transferable technical foundation - empowering them to adapt, modify, and confidently build their own creations with precision and intent.
The Program
This masterclass follows a structured, step-by-step progression, starting with foundational components and advancing toward complete pastry construction and final assembly.
Core techniques and components covered include:
- Sponge cakes and structural bases
- Inserts, compotes, gels, and crémeux
- Whipped ganaches and mousses
- Theory and techniques in creating these pastry elements
- Balance, texture, and flavor construction
Under the supervision of chef Ramon, participants will produce each element from start to finish, assembling and finishing the pastries with modern professional decoration techniques. The program concludes with a tasting buffet featuring all completed creations.

RAMON MORATÓ
Spain’s Best Master Pastry Chef in 1997, and currently global creative director of Cacao Barry,
Ramon Morató is also the author of the acclaimed books ‘Chocolate’, ‘Files’ (2021), co-author of the
book Four in One, alongside Josep Maria Ribé, Raúl Bernal and Miquel Guarro.
Not only is he one of the most acknowledged professionals in
this subject, but he is one of the best teachers able to explain chocolate and pastry with a 360-degree look, from knowledge and science, the latest trends and new consumption habits, and the spectacular design of their elaborations with their corresponding recipes and techniques.
In recent years he has been generously sharing his experience about his passion for chocolate and pastry,
through masterclasses, seminars and conferences all over the world at the best academies and venues,
as well as special endeavours such as the Harvard University collaboration project through
the Alicia Foundation.

Terms & Conditions of Attendance
Minimum number of participants
Our courses are held with a minimum of 8 participants.
If you are traveling from another city or country, we strongly recommend booking flexible or refundable transportation and accommodation. Before making any final reservations, please contact us to confirm whether the course has reached the minimum number of participants required to take place.
Course Confirmation & Cancellation Policy
The course will be officially confirmed 14 days prior to the scheduled date.
In the event that the course is cancelled by the school, the participant will receive a full refund of the amount paid up to that date.
If the course is postponed or rescheduled, participants may accept the new date, or choose another course from the school’s calendar.
(In these cases, refunds are not applicable.)
The school cannot assume responsibility for, nor reimburse, any personal expenses incurred by participants, including but not limited to accommodation, flights, meals, or transportation.
If a participant cancels their attendance, the participation fee is non-refundable.
The participation fee is valid exclusively for the reserved course date and is not refundable, except under the options outlined above.

Step 1: Book your seat online;
Step 2: Make payment.
When booking your seat, you can choose between 2 Payment Options:
FULL PAYMENT - 998 EUR (Vat Included)
or PARTIAL PAYMENT.
If you choose PARTIAL PAYMENT, you will pay the participation fee in 2 instalments:
- 60% is payable upon booking - 599 EUR (VAT Included)
- 40% is payable in 6 weeks prior of the event - 399 EUR (VAT Included)
When booking the class, choose your Payment Option, then click on the ADD TO CART button, then follow the check-out process.
In the check-out process, you can choose to make payment:
- ONLINE
- BANK TRANSFER.
For ONLINE PAYMENTS we use Stripe as payment processor.
When choosing this option, your spot will be confirmed immediately.
If you are booking the class less than 6 weeks from the class date then the full fee is payable on registration.

Please arrive at the appointed hour, so you have time to go through registration process and change your clothes.
Bring with you a white chef's jacket, long trousers/pants and comfortable shoes (closed).
Please be aware that in our lab the temperature is around 20°C and dress accordingly.

Important, please keep in mind:
– The payment is valid only for the date of the workshop and is non refundable.
